North Vietnam Food and Drink


A/ Home to many ethnic minority groups, the mountainous area of Northwest and Northeast Vietnam has many delicious dishes such as:

  1/ Black chicken, tofu and vegetable soup (Lau ga den)
  2/ Fried chayote leaves with garlic (Dot xu xu xao toi)
  3/ Fried "lon cap nach" pig - black pig raised in natural mountainous enviroment (Thit lon cap nach xao)
  4/ Steamed Cai Meo vegetable (Cai Meo luoc)
  5/ "Au Tau"- toxic rice gruel  
  6/ "Thang den"
  7/ Steamed snails with ginger used with fishsauce and chilies
  8/  Roasted sweet potatoes

"Au Tau"- toxic rice gruel  
Toxic! Yes it is. Au Tau is a type of wild bulb that has hard, black cover. It contains toxic, which is usually used for medicine. However, like other types of herbal medicine, after being treated in a special process, Au Tau becomes a tasty dish and has special effects such as relieving flu symptoms.


  
Au Tau bulb is cooked quite sophisticatedly. Firstly, it must be soaked in solid water of rice then steamed well so that the bulb gradually become solid powder. This kind of powder is put into the pot containing pig's trotters and rice; sometimes there is also sticky rice in order to make the dish viscous. 
To enjoy the dish, people scoop out the gruel into the bowl; put more chicken eggs, minced pork, and spices including chili, pepper, onion and specially perilla. The dish’s taste is greasy, spicy and especially bitter that is the typical feature of it. Its bitter taste makes people feel not interesting at the first but after several spoons of gruel, they will feel sweet in mouth. Eating the dish frequently, you will become addicted to it.      
Au tau gruel is a kind of gruel that should be enjoyed at night.

"Thang den" made of sticky rice in round shapes, peanut, hot thick paste of sugar and water. Enjoy with the friends in cold weather at night of Dong Van town. 10,000VND/bowl.

B/ Thousands of  cows from the Netherlands are raised on 14,000ha grass-lands of Moc Chau plateau in Northwest. They provide fresh milk to Hanoi and to other provinces for producing tinned milk, yoghurt and other milk products.

C/ With the cool weather around the year, many plateaus in Northwest are the heavens of many fruit trees, especially plum, apple and peach

D/ Staying on the high mountainous area, most of the ethnic minority men enjoy drinking very much, especially corn wine (ruou ngo) and wild apple wine (Ruou tao meo)
